Green cardamom, often referred to as green elaichi or elakka, is a highly aromatic, premium spice derived from the seeds of the Elettaria cardamomum plant, part of the ginger family. It is widely considered the "Queen of Spices" due to its intense aroma, unique flavor, and versatility in both sweet and savory dishes.

Appearance: The spice consists of small, light-green, papery pods containing dark brown or black sticky seeds. High-quality cardamom typically boasts a bright green color (sometimes machine-dried).
Flavor Profile: It features a complex, sweet, floral, and slightly lemony/eucalyptus flavor with a warm, spicy undertone.
Size Grades: Frequently sold in sizes ranging from 6mm up to premium bold sizes of 8mm+.
Plant: The plant is a herbaceous perennial that grows 2 to 5 meters in height, with thick, ramified rhizomes and large lanceolate leaves.
